Summer Recipe: Fruit and Berry Coconut Bowl
In anticipation of the Southampton Hospital Foundation’s 66th Annual Summer Party on Saturday, August 3, 2024, Elegant Affairs, who will once again providing a culinary delight for attendees, has shared a refreshing seasonal treat, created by Executive Chef Mike Bicocchi.
Full of antioxidants, fiber, and fruit, these Fruit and Berry Coconut Bowls are the perfect summer desserts.
Fruit and Berry Coconut Bowls:
- Prepare the Coconut Bowls:
- Carefully cut a coconut into two even halves.
- Drain the coconut water (approximately 11 ounces) and scoop out some of the coconut flesh to create a bowl shape. Set the scooped coconut pieces aside.
- Create the Fruit Mix:
- Chop up your favorite fruits and place them in a mixing bowl.
- Add a splash of lemon juice and a sprinkle of sugar. Mix well to combine.
- Assemble the Bowls:
- Spoon the fruit mixture into the prepared coconut halves.
- Garnish with fresh mint leaves and the reserved coconut pieces.
- Serve and Enjoy:
